I love the smell of the boil. Fun fact - when the wind is just right, Marquette University smells like that because it's so close to the Miller brewery.
 
I love the smell of hops. I brewed yesterday and part of my process is to measure out my hop additions into small bowls while the mash is going.

As I was vorlaufing I kept getting whiffs of the hops (columbus in this case) and it was borderline intoxicating. That's when I figured it was time to open one of my favorite DIPAs (Loopy Lynn).

I wonder if the Mrs would do the hops candle...she loves IPAs....
 
When i do a partial mash, the smell drives the weef right out of the house.

I brew both at home and at a brewpub I'm interning at. Once the mash is in I can just stand there and breathe through my nose and I love it. I've also been known to stick my head in my hop-filled freezer and snork up that lovely smell. I brewed a Pliny clone a while back, once it was done it smelled so good I actually inhaled beer up my nose (not intentionally) and didn't care.
