what do you think of this.. 2 gallon batch pale ale low abv... fermenting in a 5 ga glass carboy with electric fermwrap that is attached only 2/3 way around carboy and OVER a tight fitting cotton towel carboy cover. Ambient temp is 37-43F. Safael 05 yeast.
STC 1000 probe on side of carboy under towel set at 64F. Think that will work??
 
Probably. Worse case scenario... you make beer. I've fermented US05 in a 55* keezer with no problems for pseudo-lagers. It's pretty robust if pitched into well-oxygenated wort. After a week or so, you might want to move the carboy to a warmer room (above 65*) for a few days to finish out.
