I just kegged my first 5gal batch of Louie's Demise clone. I am a cask beer guy, so warm and flat is how I like em'. Until I futz with my empty chest freezer to get the temp around 50*F to store my kegs there, I am just going to be serving at cellar temperature (56-58*F). Do I set the regulator to 10-12psig and leave it for a week, or what? I'm looking for 2 volumes of CO2 max...

Okay, need more Dopplebock, so /post.
 
Check out this carbonation chart. Two volumes of CO2 at 57°F calls for between 14 and 15 psi.

btw, carbed-to-style classic cask ale is usually served around 1.1 volumes of CO2, which at 57°F would require around 2 psi...

Thanks; I have that on my desktop, but after talking to some of the guys at NB today, I wasn't sure if I should still carbonate cold and then warm it up after that fact. I'll just throw a few more pounds on the regulator and go with it.
 
As I search for a Louie's Demise clone this is the only thread that shows up in the search at this site.

Anybody have the recipe for an all grain version?
