I'm going to be doing a deep dive on all of my fermenters and REALLY getting them clean, and insuring they're sanitized. I always clean them and sanitize w/ iodine, but I've got some barrel aged sours in the brewery now, and want to make extra sure that everything is good to go.

I work for an automotive lab, and have a bunch of temperature chambers that I could sneak my equipment into for an overnight soak once I've verified everything is clean. What temperature/humidity profile should i dial in to insure that everything is sanitized? Is it possible to get sterilized outside of an autoclave?

Chambers are good for at least 150C w/ humidity control. I've got glass fermenters and kegs that I'd like to give a temp soak to. I've got one oven that's good for nearly 400C, but no humidity control in it.

Thanks!
Kevin
