Does anyone out there have any idea what size cooler i would need to fit two 6 gallon carboys, with some room around them for water? my plan is a temperature controlled fermentation.

yep, you've got one in your kitchen. I think you are talking about a refrigerator. No?
I didn't think the fermentation should be quite that cold, but yeah, you will need something really big for two of those. What are the chances you could get something wide enough and build a collar like it were a keezer? You might also consider something like this:
