I have a chest freezer with a ranco controller, and just moved to fermenting in Kegs.

What's the best way to control ferm temps when using kegs as primary?

thermowell? Probe taped to side of keg?
 
I tape the probe to the side of the keg and insulate it on the outside with a sponge.

Great technique. Reducing the external heat load on the sensor and getting the sensor as (thermally) close to the UUT (unit under test) is the best anyone can do.

I use a bungie cord with a foam backing. From what i can tell, it's pretty accurate.
 
thanks all. it's what I do with plastic buckets, carboys...

Upon further research, it sounds like the stainless steel of the Keg might actually be even more accurate than either the glass or the plastic.
