I just tried my beer after one week of bottling conditioning.

Slightly carbonated and has gotten clearer.

The ginger flavor actually got stronger, which surprised me.

The only thing that worries me is I cant tell if there is a sour flavor or its the over powering ginger flavor.

I bottled after using Sanstar, and I read here on the board to not fear the foam. When I bottled, there was still bubbles left from the sanitizing solution. I hope that is ok.

Looking forward to trying it again in another week!
 
Yep, hard to wait for sure! I find my IPAs change dramatically every week for the first 3-4 weeks. Don't judge a book by it's cover and don't judge your brew until week 3-4! (longer for high ABV)

I bottle in 22's but I make it a habit to put the last bit into three or four 12oz bottles strictly so I can taste one at the end of each week. For no real reason other than I enjoy taking part in the conditioning process, so to speak. I love to see how the beer develops.


...and as was said, don't fear the foam from Starsan.
 
No worries. You can't tell much after one week. Two weeks is also too little time. I have had a couple of low gravity batches taste okay at three weeks, but mostly they are ready at 4+ weeks, depending on the brew. I don't bother testing them until the 3 week point at the earliest. By all means, satisfy your curiosity, but don't expect to be able to do much evaluation so soon.
