Looking to make my first wine was thinking a Riesling, peach, and a Niagara going to go 6 gal batches going to get the juice from walkers was wondering how much sugar and what type of yeast to use want to keep it on the sweeter side
I would adjust the sugar for the alcohol level you want and choose a yeast for the flavor your looking for then sweetn when the fermentation and fining are complete.
