Sweet Mango Chutney

6 oz canned coconut milk
1 mango, diced
2 Tbsp raisins
2 Tbsp regular flavor Craisins
2 Tbsp rice vinegar
1/2 cup brown sugar
1/2 tsp garam masala
1/4 tsp curry powder
1/4 tsp chili powder
1/8 tsp cayenne pepper
(all spices are to taste - I think I used close to the amounts listed...)

Combine all ingredients in a saucepan over medium heat. Bring to a boil and reduce to a thick sauce.

Serve over grilled chicken, lamb kebabs, or as a condiment with a variety of Indian-type dishes. Pair with a clean, crisp lager.
