Currently having my first experience with temp control. Got two batches going right now, one being a IPA using us-05 and the other being a red ale using WL005. My question is, when I take temp readings of the water, do I need to shoot for lower than my goal due to the ferment creating heat? or does that reading accurately reflect the temp of the wort? Been keeping the IPA's water down to about 62 and the Red Ales water has been hanging out around 65.
