I am thinking about building a jockey box with cold plate. I have read that if there is water touching the cold plate the beer will come out foamy. I would like to be able to use this inside, or at least without the drain open all the time, so could I suspend it in the cooler to get around this problem? Has anyone else tried this?

I've never seen that about water. Actually, for optimal thermo transfer water with ice is much better conductor of cold than just ice.
