I am going to take a stab at a Leinenkugels Sunset Wheat clone this weekend:

(6 gallon batch)

5.0lbs Pale Wheat Malt
5.0lbs Two Row Pale
0.5lbs Flaked Wheat

0.5oz Cluster @ 60m
0.5oz Cluster @ 5m

US-05 yeast

2.0oz Blueberry Extract @ kegging

I'm also going to add some crushed Coriander seed at flame out. The question is, how much?

I am thinking either 0.25oz or 0.5oz.

Did you come up with this recipe yourself? I have only used Coriander in wit biers with orange peel and sometimes black pepper. An ounce gives a nice flavor but I question how much 0.25 oz would do. I would go with 0.5oz or even 1oz and see how it turns out.

I came up with the recipe in this thread:

Coriander is mentioned in quantities from 1/8 to 1 oz. I picked up an ounce, but have not yet used it. In a book I'm reading (Brewing With Wheat), some talk about how too much coriander will ruin the taste.

I'm leaning toward a half ounce. I would rather have too little, than too much.

Thanks for the input.

Exactly, it's much better to have it not very prominent in the taste than jump out and punch you in the face.

I just brewed a wheat beer last week. I used .75 ounce coriander along with orange, lemon, and lime peels. I just read though to break up the coriander seeds which I didn't do so I may not get much flavor afterall

I have read of putting the whole coriander seeds into the bottle for extra flavor. You may not get as much as you were hoping, having not broken them up, but I am sure the flavor will be there.

I'm going to crush them in a coffee mill and add them at the end of the boil. This batch will be kegged.

I know this is an old post but for information's sake.

I made a 5 gallon batch of Saison. I used a .50 ounce and added with 5 minutes left in the boil.

I also added bitter orange peel and seeds of paradise.

I was very sad when this beer was gone.
