Sometimes, I just feeling like going all out for a Sunday Dinner.

Slow Cooker Pork Chops (with apples and onions from the cooker on top)
Garlic mashed potatoes (half red potatoes and half yukon gold) topped with gravy made from the pork chops, apples, and onions
Sauted Asparagus

We also had cinnamon apple crisp with vanilla ice cream, but I ate some of it before taking a picture. Oops.
 
Love those Yukon gold potatoes... my favorite. Good idea mixing them with red potatoes for the skins. I'll have to try that.

I had never tried it, but I will do it again. It gave a nice contrasting texture. Most importantly, the skins of both potatoes seem to fit in and it went great together. I had always skinned the potatoes first when I make mashed potatoes. Which is why I never make them. Now that I don't need to skin them, I might make it more often!
 
Looks awesome. I need to try the slow cooker pork chops. Did yours come out tender and falling off the bone or sort of dry? Pork chops can sometimes be difficult to not dry out (especially the thinner cut ones).

Tip for mashed potatoes: add a little cream cheese and mix it in...makes 'em even more yummy!
 
I always over cook my asparagus :( I think it's my crappy electric stove... Does look delicious though!

I do them in the microwave. I check them every 20-30 seconds and when they are still crunchy but bend slightly I take them out. They will still cook a little more but come out great.
 
SUNDAY dinner?

We did similar for a Wednesday grill. Steak instead of pork. Grilled the asparagus enough to get little kisses of char.

I don't do the pork but that does look good.

The recipe calls for thick cut chops. I got ones that were 1.5"-2". I brined them overnight, which helps keep in moisture. They were moist, for pork chops. Still had a great pork flavor, but moist.

I'll have to try that with the mashed potatoes, thanks!
