In the grapefruit department who wins this battle? I like the idea of the over the top heavy hit of Summit but I don't like the onion/garlic aspect that can come along with it. I don't have much experience with Stella hops but what I've read is that in heavy use it can impart a tropical/grapefruit flavor with hints of spice and star anise. Here is said recipe.

12 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 83.5 %
1 lbs Vienna Malt (3.5 SRM) Grain 2 7.0 %
8.0 oz Caramel/Crystal Malt - 20L (20.0 SRM) Grain 3 3.5 %
8.0 oz Caramel/Crystal Malt - 40L (40.0 SRM) Grain 4 3.5 %
6.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 5 2.6 %
0.50 oz Horizon [12.00 %] - First Wort 90.0 min Hop 6 19.9 IBUs
0.50 oz Horizon [12.00 %] - Boil 60.0 min Hop 7 16.9 IBUs
1.00 oz Summit [17.00 %] - Boil 10.0 min Hop 8 17.4 IBUs
1.00 oz Summit [17.00 %] - Boil 5.0 min Hop 9 9.6 IBUs
1.00 oz Summit [17.00 %] - Boil 1.0 min Hop 10 2.1 IBUs
1.5 pkg Safale American (DCL/Fermentis #US-05) Yeast 11 -
1.00 oz Cascade [5.50 %] - Dry Hop 3.0 Days Hop 12 0.0 IBUs
1.00 oz Centennial [10.00 %] - Dry Hop 3.0 Days Hop 13 0.0 IBUs
1.00 oz Chinook [13.00 %] - Dry Hop 3.0 Days Hop 14 0.0 IBUs
1.00 oz Summit [17.00 %] - Dry Hop 3.0 Days Hop 15 0.0 IBUs

Summit and Stella to be substituted if needed.

Summit wins if you're looking for citrus. And your recipe is all about that dank pacific NW hop flavor.

(St)ella is generally a milder hop overall and I haven't really ever gotten grapefruit from it. Maybe grape or plum are comparable fruits.

Try it solo in a pale ale, or even better in a strong stout at 15 minutes to get that sharp anise aspect.

summit all the way, its very strong and pungent grapefruit character is what keeps me coming back! Love dry hopping with summit as well!

Well after the last minute and whirlpool additions my house turned into a giant grapefruit. This hop is nuts!
