Summer mango wheat recipe help!!!!!

So still kind of new to brewing but I have made 5 batches already. Some were great others were not so much but all in all I've made some good beer. I have started biab an have made the summer citrus wheat that is on the forums here. I loved it but now I want to change up the recipe a little to make a mango wheat. I did some research and I found out about the citra hop and how it was described. Sounded great for what I was going for so I'm going to add them as a late addition to my boil

So what I want to know is if the amount of hops being added will enough to add favors that we're described as mango and also aroma? Also I was going to keep the orange peel additions. Would this be a good idea or will it not work well with the mango?

I've never done any fresh fruit addition to my beer and need some incite on the process. I did some research and I'm going to add 7 pounds of fruit to my secondary and let it sit for about 3 days on the fruit. I read that more fruit favors will be present of less of the fruit sugars are fermented out. Before it is added I sanitize all utensils used and the outside of the fruit with sanstar before cutting then place in a freezer to be frozen.

6lb white wheat
4lb pale 2 row
.25oz sweet orange peel
.25oz bitter orange peel

.38 cascade. 60min
.25 citra 15min
.25 citra 5min

I think your going to need more Citra than that. Why not go with something like... 1oz Cascade@ 30min .5oz Citra @10min . 5oz Citra @5min and 1 oz Citra @ flameout? I think orange mango is a good mix, its actually my favorite kind of Simply Orange juice. And you got the right idea about what to do with the fruit... But your going to have to leave it longer than 3 days. The sugar in the fruit, not sure which kind your using(assuming mangoes), will kick back up the fermentation again so youll have to give it time to ferment out and let the yeast fall out of suspension. Otherwise you could get bottle bombs or over-carbed beer.
 
I had the same thought about the amount of time in the secondary as I was writing this. Thanks for the info. Just one question why add the cascade at 30. I like the citra additions and will do it as you stated.
 
A 60 min addition of cascade is just going to add bitterness. The 30 min would still be a bittering addition but it would add somewhat more flavor. From the hop schedule you wrote and the size of the additions I got the vibe you don't it too hoppy.
 
Your exactly right thanks! Just wanted to know what was the reasoning. I guess it was like a habit type of thing. I've never made a beer without a 60min addition of hops. Guess I just thought it was standard.
 
Went to my LHBS and they didnt have Citra hops so they told me a good replacement will be Zythos. I went ahead and purchased it. Really didnt have much of a choose on this one. Has any one used theses hops before.

Sounds like a great hop to go with this beer. I ended up getting about 9.5 lbs of mangos cut up today. Placed them in the freezer and will be waiting in there for when the time calls to get it started. Now I need to go back to my LHBS to pick up some dme for my starter that I forgot. 35 minute drive for me not very fun.

Doesn't sound very Local. Orlando doesn't have any HBS's? Or are you outside of Orlando?
 
Yeah it's still orlando technically. It's off of lee road next to winter park. I leave by Kissimmee so it's quiet a drive.
 
Update on the beer. Brewed yesterday and is happily fermenting in my bathroom closet as we speak. Smells great!!! The zythos hop aroma came through big time and looks like it will serve the purpose it was intended for. I was told the mangos are a very subtle in flavor that's why the citra hops sounded so appealing to me. They were described as having mango aromas, so I thought that the mango flavor will be more noticeable or give the beer the appearance of more mango flavor. Look forward to this one can't wait.
 
I love citra. I just brewed an IPA that had Mai Tai aroma and flavors of Passion fruit and mango. I used Citra and Amarillo. It was a huge hit.
Can't wait to hear how the Zythos does for you. Please keep us updated.
 
For sure. It's going along well just have to play the waiting game now.
 
Going to check the gravity today to see where it's at but I'm sure it almost completed primary fermentation. Every time I pass by the bathroom I have to go in and take a good whiff of my beer. It smells great!!!! Can't wait to get the mangos in this beer.
 
Just checked gravity and it's at 1.010 looks like its done. I'm going to take another reading tomorrow to see if there any further movement.
 
Just put this on the mangos. Smells great and hoping everything turns out ok. I thawed the fruit that was in the freezer for about a week then crushed before placing in the secondary. Ended up with a purée consistence with small chunks of the fruit. Fermentation started again the next day. Now it's round two of the waiting game. Lame.

Re racked this off of the fruit a couple of days ago then bottled today. Going to give it a couple of weeks then report back on how it tastes. The samples from the hydrometer readings tasted very mangoy. Looking forward to tasting this one fully carbed.
 
This beer is complete finally and I'm liking what I taste so far. It been two weeks and a half bottle conditioning and it's getting tasty. It's a refreshing wheat it a very noticeable mango flavor. I do not get any mango aroma but that's fine with me. I like it but probably won't be doing this one again very time consuming.
