Hi Guys,

I was looking for a recipe for a spicy (cinnamon, cloves,pimento etc) ale that is not a dark stout or similar and with very little to find decided I want to just make together my own.

I imagine an AIPA like base to then try and augment with such spicy flavours.

Can anyone recommend what hops/ yeast/malt varieties would be good to bring out good spicy flavours together with some citrussy zing (hence the AIPA choice). I would probably add some of said spices directly as well. Not too sure when and how is the best way to add these.

Any recommendations would be great! :)

PS. 'Summer' because I am in southern hemisphere
 
I don't know if you will find what you want here but I just stumbled across this website last night. It is the site of Mob Craft Brewery in Wisconsin. They do a lot of specialty spiced beers and all of their recipes are on their website. They've even scaled them down to 5 gallon batches for homebrewers.

PS. they have one called Tom and Jerry Christmas ale that may fit your bill.... its a spiced cream ale.
 
That's a really great find Kevin , thank you... Got some good ideas of good ingredients to use just browsing through some of those recipes.
