Hi Guys,
I was looking for a recipe for a spicy (cinnamon, cloves, pimento etc) ale that is not a dark stout or similar and with very little to find decided I want to just make together my own.
I imagine an AIPA like base to then try and augment with such spicy flavours.
Can anyone recommend what hops/ yeast/malt varieties would be good to bring out good spicy flavours together with some citrussy zing (hence the AIPA choice). I would probably add some of said spices directly as well. Not too sure when and how is the best way to add these.
Any recommendations would be great!
PS. 'Summer' because I am in southern hemisphere
