Please give feedback. This is my 3rd batch. Really enjoy this new hobby!

Batch size: 5 gallon
Boil size: 2.5

Grains:
2 lb pale malt
1 lb Carmel 60L
(Boiled at 155 for 30 minutes)

Extracts:
3.3 lb light Pilsen LME
2 lb wheat DME
1 lb amber candi Sugar

Hops:
1 oz hallertau (60 min)
1 oz hallertau (15min)
2 g grain of paradise (7 min)

Yeast wlp001 California ale yeast

Pitched at 75 degrees. Fermenting at 70-75 for 7 days then transferring to secondary and adding orange peel and lemon peel. Thoughts?

OG: 1.056
 
Hello and welcome to the forum.

I have a few qeustions about your recipe:
- Is this an extract with steeping grains or a partial mash? The 2 lb. of pale malt requires mashing, which is similar in process to steeping, but you'll need to conver the startches in the grains into sugars. It's not difficult. I'd advise you search the forum for partial mashing basics.
- Boiled at 155 for 30 minutes? I suppose you mean steeped at 155 for 30 minutes as water does not boil at that temp. As mentioned above, you'll need to conver the sugars in the pale malt. Keeping the grains at 155F for 30 minutes should convert the pale malt, just make sure the grain is milled.
- What are the estimated IBUs for this recipe?
- Is there are a particular style, or commercial example, you are shooting for?
- I am not sure the beer needs any orange or lemon peel, but I'd probably forgo the secondary if that's all you are adding. These ingredients can also be added to the boil at about 10-15 minutes.
 
Sorry the grains were steeped at 155. I had the guy at my LHBS grind them up for me. I'm trying to get it similar to sam summer ale with a hint of orange.

Ah, Sam Adam's Summer, hence the grains of paradise, cool. Sounds like a good brew. Yeah, if that's what you're going for I would add lemon zest to the primary at the end of fermentation, or to the secondary (I rarely fool with a secondary). I am not sure the beer also needs orange peel, but that's up to you, you're the brewer.
 
Ok cool! Yea I wanted to add some orange so I'm not making sam adams summer ale. I want to make my version of it so I thought what the hell, add a little orange.
