I am looking to brew a strawberry pale ale for a friends bachelor party (ever since a crazy night in Vegas we call him Strawberry Sl$tcake). I received a few suggestions from the head Brewer at Shorts in Michigan and have drafted the recipe below. Any suggestions would be greatly appreciated.

OG 1.053
IBU 38.1

10 lbs 2-Row
8 oz 20-L
8 oz Caravienne

.5 Mosaic FWH
.5 Mosaic @ 15 minutes
.5 Mosaic @ 5 minutes

8 lbs strawberries @ flameout

California Ale Yeast

His suggestions were using Mosaic hops and adding puréed strawberries at flameout as he goes it this way at the brewery.

Just a few notes. Caravienne and c20 are pretty much different versions of the same thing. Not that using both will hurt.

If you can get belma hops they have a distinctive strawberry flavor to them.

Other than that it looks fine. Strawberries tend to have a pretty delicate flavor in beer, I might add more if you can afford it. Its a pity they arent in season, so they'd be cheaper and more strongly flavored.

Yeah, if you could wait a few months & find a pick-your-own place, you'd get nice strawberries, sweet as candy, for cheap.

Be careful using the Cali yeast. Personally, I would use a less attenuative yeast with low floc and I would mash no less than 154. I would use an English yeast (not dry english) like London ale or London ale III.

The strawberries will undergo a secondary fermentation and you can wind up with a pretty tart beer. Especially with American yeasts.

I do a Mango IPA and even add a bit of lactose to avoid it getting too tart.

Just my 2cents.

Good luck!

Really like the suggestion of Belma Hops based upon what I have read about them. Looking at changing hop schedule to following...

.75 oz Belma Hops FWH
.25 oz Belma 15
1 oz Belma 10
1 oz Belma 5
1 oz Belma Flameout
3 oz Belma dry 7 days

From what I hear it takes quite a bit of Belma to get any aroma.

Also how much lactose would you recommend?

Thanks
