Suggestions for Tupelo honey recipe?

Hi,

I was at the local honey store a few weeks back and spotted some tupelo honey. As folks have raved about the stuff I grabbed 2, 2lb jars (I only do 1 gal batches right now), and was wondering if anyone had any recipe recommendations specific to this type of honey?

I personally would do a plain or show mead with 2.5 - 2.75 lbs of honey in the 1 gallon batch with some yeast nutrient, Lalvin D47 yeast and top up with water. This would give you a not too sweet mead which would accentuate the true flavor of the honey.

Yeah, tupelo and sourwood are two southern varietal honeys that are awesome as straight meads. I'm going to do a sourwood at some point, one of these days...

Interesting. I was thinking something with flower petals to accentuate the natural floral characteristics of the tupelo. See, this is why I asked

+1 on the medium show mead. I'd make certain to add yeast nutrient/energizer & DAP for a healthy fermentation. Regards, GF.
