Hello all! I attend university in Florida and I'm taking a class on the art and science of brewing. Yep. I get college credits for making and tasting beer. What a glorious time to be alive.
We've already brewed our first two batches, 2.5 gallons each, and for our third and final batch we'll be holding a special "competition" against each other, while a body of judges (our teachers and provost of the college :D) decides what the best beer is! I'll be stalking around the forums for good ideas and inspiration for mine and my partner's final beer.

Jealous. I'm a grad student at UGA and have been wishing for a brewing class or years.

Lucky bastard...
I would brew a IPA with Mosaic, galaxy, and citra hops (dont hop anything more than an 1oz at boil and make 1 oz addition at 30. Whack it hard from 15-10-5-0-dry hopp with your desired hops) It makes for a smooth, non harsh bitterness with tons of aroma and smooth flavor....Make sure you include 1-2lb of honey malt and maybe 1lb-2lb 40L for a nice reddish color and some west coast ale yeast-- this leaves some residual sweetness and a good backbone without compromising the hops; other than that you decide the grain bill with some 2 row.....Its my and our brew clubs new favorite...
