Hey everyone. So last Sunday I brewed my second batch of beer ever. I found a recipe on this site and slightly modified it. The thing is I slightly over boiled and ended up with about 5.6 gallons in the carboy instead of 6 and my og was 1.075 instead of 1.054 like the original recipe stated and I think I also achieved a efficiency of around 85-90% if I'm calculating right. I pitched a 1liter English ale yeast starter and a wyeast American ale 1056 packet which I didn't break the nutrient pack inside of accidentally. The beer has been in the fermenter for 8 days now and It seems the last 2 days my gravity has stayed the same at 1.032, so did I under pitch, is there anything I should do or is it just fine?
 
I'm curious why you mixed 2 different yeasts .

At any rate, it sounds like you pitched a healthy dose of yeast ...the 1L starter shoulda been fine. What's the temp been like ?
 
When I used a yeast pitch calculator it told me to make a 2liter starter for this batch but I only have a 1 liter flask and I didn't want to under pitch so I went to my LHBS and all they had was the English ale yeast so I picked that up and decided to just mix them with there recommendation. The carboy has been right around 65 degrees.
 
You didn't under pitch, you pitched a lot of yeast. However, your OG was extremely high and may have affected the yeast and caused them to drop out quicker. Your attenuation was only 57%, so I would say that the yeast stopped early.
 
So if the yeast stopped early is there anything I should do or will it be fine if just left alone? I'm also sorta confused by gravity did I achieve a higher gravity b/c I over extracted sugar from the grain or some other reason?
