I was making edworts apfelwein with the montrachet yeast. I had no activity for the first 6 hours then after that it took off for about three days. now, 4 days after that, it doesn't even have the little bubbles around the rim that edworts did and the airlock is not moving whatsoever. I've checked my seals and those are fine.

So I guess my question is would it be okay to rep itch with a different yeast. I was making this for my wife and she likes ciders more than wine so I was thinking to maybe pitch an ale yeast? would that produce off flavors?

How do you know it's "stuck"? Can you share any gravity readings with us?

I'm out of sanitizer so I don't dare break out my hydrometer.
When I look into my fermenter there is no sign of active fermentation. No little bubbles no suspended yeast no airlock activity (I know airlock is not an accurate display of fermentation).

It sounds like it's finished. It should start clearing shortly after finishing up.

after a week?

It's quite possible. Leave it alone for another week while you get some StarSan then get a reading.

Simply pitching more yeast is most often not a good solution after you've seen an active ferment like yours.
