I am planning on brewing a strong IPA, in the 11 to 12% range, and am wondering what yeast I should use. Would Safale us-05 take this down from 1.104 to the 1.017 neighborhood for a ABV of ~11.5, or will I need something else? If US-05 will work, will it still have enough power to carbonate my bottles? Thanks in advance.
 
I used US05 in a barley-wine, got it to 11% and it carbonated the beer just fine. Use two packs if you are making 5-6 gallons, is my recommendation.
 
US05 can get you to 11%. I recommend oxygen injection at pitching and again 12 or so hours later. I force carb, so I can't say about bottling.
