Stout tastes watery at bottling

I just finished brewing a whiskey barrel stout. Just before bottling I tasted the beer and thought it was more watery than it should be. There is flavor, but it goes down much like water. I was wondering if this could be simply due to the lack of carbonation. Does a lack of carbonation affect the flavor of the beer?

Normally you carb lower on stouts because it increases the body/mouthfeel. If you carb to high stouts tend to end up quite thin. People think carbing increases body and it does to an extent but I think the conception that more is better is from nitro kegged stouts where the bubble size is extremely small.

For example a dry stout can be carbed as low as 1.5 C02 volumes
 
I brewed a whiskey barrel stout from kit.
I don't remember who's it was.
It tasted thin at bottling, I had problems with carbonation after bottling
I had a few that did carbonate properly. Wow! what a difference in mouthfeel!
I'd go with that. wait and see.
