Can someone just review this recipe and make sure it isn't whack? I made a database of the stouts in the recipe book I have and somewhat averaged them together keeping the ratio of specialty malts to base malts the same. (I considered the oats a base malt and changed the 2-rows to GP).

5 gallon batch

Golden Promise...10 lbs
Flaked Oats .........1 lbs
Crystal 120 .........0.63 lbs
Chocolate Malt.....0.5 lbs
Roasted Barley.....0.5 lbs
Black Malt...........0.5 lbs
Coffee Malt.........0.25 lbs
Munich Dark........0.25 lbs
Peated Malt ........0.1 lbs
13.73 (total)

BIAB @ 152° for 75 minutes

Cascade 1 oz @60
Goldings 0.5 oz @30
Goldings 0.25 oz @15
Goldings 0.25 oz @5

75 minute boil

Yeast 1098 English
or 1084 Irish

BF @ 76% efficiency
OG 1.075
FG 1.019
ABV 7.29%
IBU 35.93

It depends on your desired result. Your Black & Roasted Barley to Chocolate Malt & Coffee Malt ratio is 7.3:5.5 in terms of %grist, so you'll get a pretty roasty stout. Is that what you want, or do you want more chocolate & coffee notes.

If you're unsure, I'd recommend making the ratio equal, then adjust future batches based on preference.

Be careful with the peated malt. A little goes a long way. Also keep an eye on water chem and mash pH with all the dark grains.

I'm a big fan of GP. Great base malt. Looks like a malty American Stout to me. Brew it and see what happens!
 
Thank you so much for the reply. You gave me more than I was looking for. Super great.

I lowered the roasted barley quantity to make the two "types" equal.
Then I get to my LHBS and they don't have the coffee Malt. I switched it to a Malt that had coffee and chocolate in the description.

Brewing tomorrow.
