Hello,
I brewed a Black is Beautiful stout 10 days ago but am uncertain about its final gravity and the water adjustments made.
Here is the recipe for an 11 litre batch ...
My OG was 1.066 and I mashed a 154 for 60 mins. I pitched US-05 at 67 and it fermented at 68. After five days the temperature fell to 66.
I measured SG 1.022 on day six and day ten, today. Expected final gravity is 1.014. So this stout is no longer ... well imperial.
I've let the temp rise up to 69 over the past few days. Should I go even warmer to see if the fermentation is really complete?
For the water, I topped off with 3 litres (Evian bottled water with high HCO3) because my kettle is too small to do an entire 11 litre batch. I used the Brewfather water adjustments. Do I need to take into account the water profile of the top-off when calculating water adjustments?
Who knows what happened with the ph as I have no means to measure it.
