So I poped open a mason jar to make a starter of some Wyeast American Ale I harvested in early November. As soon as I took of the outer ring the seal broke and the top broke its seal. The yeast in the jar started to bubble like it had some how carbonated during storage. I dumped the liquid off the top of the yeast cake at the bottom of the jar and it bubbled enough to form what looked like a 1 inch krausen. It still smelled exactly like yeast. I didn't notice any off smells what so ever and it didn't have any funky growths of off colors you'd expect from an infection. I ended up just dumping it and using some British Ale yeast I had instead of risking dumping an infected starter.
I'm pretty sure it had to have an infection but was there any chance it fermented some left over sugars and just carbed? I used a jar harvested from the same batch a month ago with no similar issues. When I harvest I dump boiled water into my carboy, let it settle and dump into mason jars and keep decanting off to get more yeast in 1 or 2 mason jars in the end.
