I just put together a mead and the stopper keep popping up since minute 1. Any idea on how to get this under control ?

It sounds like the stopper is wet. You can dry the neck of the vessel and the bung with a paper towel, or let it air dry, and then put the stopper in it. Or, you can just use a paper towel or cloth and a rubber band over the fermenting vessel until fermentation begins, and then slows, and then put the stopper and airlock on. It makes it easier to stir the mead if you do that.
