I just watched the third episode of Brew Dogs and they included stone ground corn meal in the beer they made for that episode (making the most "American" beer they could, they went with a colonial era inspired recipe that had pilsner case malt, coffee malt, molasses and corn meal added to the mash). I'm interested in giving it a try because of the unique flavors they mentioned that corn meal could bring to the beer as the process of stone grinding the corn slightly roasted the meal.
Has anyone out there used stone ground corn meal before?
would you just substitute the corn meal for flaked corn in the same amount by % in the recipe? Flaked corn adds sugars but usually not flavor unless you really overdo it.
flaked corn is usually no more than 10-15% of the total grain bill in most recipes I've seen.
