Stir plate build help

Hey guys. Im working on building a stir-plate and am running into an issue. Using the directions at stirstarters.com, http://www.stirstarters.com/instructions.html, they suggest a 2k ohm potentiometer. Radio Shack has bigger ones and smaller ones, but none exactly 2k ohm. Can I substitute a different size and it be ok? If I change that, wouldnt I also need to change other components?

Bigger than 2k is 100% OK for that application

I'm not an electronics guy, but I built all of mine with 25 ohm potentiometer. Not 2000 ohm. What do I know, this is not my type of thing.
