I finally got my cooler mash tun not to leak and it was just sitting there, all dressed up and no place to go. So......I brewed my first AG, a Honey Weizen, single mash. Don't know if this is the right form, but here goes.

Target gravity: 1.048
Batch size: 5 gallons
Boil time: 1 hour
Water: Spring
Fermentables: 4 lbs Weyermanns Pale Wheat
4 lbs Canadian 2 row Pale
Hops: 1 oz Sterling (60) 6.6 % Alpha acids
Additions: 1/2 tsp gypsum (60)
5 Star Defoamer 2 drops/gal (60)
Whirfloc 1 tab (10)
1/2 tsp Wyeast Nutrient (10)
1 lb Clover Honey (1)
Yeast: Safbrew WB-06 11.5 grams re-hydrated, pitched @ 70 F
Pre boil volume: 6 gallons
Pre boil gravity: 1.040
Final volume: just under 5 gallons
Post boil gravity: Broke my hydrometer just as I was about to measure!!!
Strike/grain ratio: 1.5/lb
Sparge: Batch 1/2 gal/lb divided into 2 sparges @ 10 min/sparge
Mash temp: Suggested 153. Able to mash within 2 degrees for 1 hour
Cold Break: 212 to 70 via WC and pre-chiller (it's Florida) 38 minutes
Aerated: via O2 stone 1 minute
Total time including cleanup: 6 hours!
Beer Consumed: Starting on my second Arrogant Bastard 22 oz. Abstained
until wort in carboy.
Errors made: Broken hydrometer so no final gravity
Timed beginning of boil on my iPhone, but when I put it back
on my belt the timer stopped. So..I had to estimate time of
boil from point of error discovery

This was quite an experience. The level of tension was equivalent to the first extract brew. But I felt I achieved something. Brewing the first AG in my DIY mash tun, using my DIY wort chiller and pre-chiller and hop bag. That Arrogant Bastard tasted sooooo good!

Can anyone estimate what my OG would be based on pre-boil gravity and pre and post boil volume? I'll try and pick up a new hydrometer tomorrow.

6 gallons of 1.040 boiled down to (let's estimate 4.9 gallons?) should give a gravity of ~1.049

btw, the math for that is reallll easy, and a useful thing to know (assuming you know your boil-off rate, you can use it to adjust your preboil volume and gravity so that you always hit your desired OG)

preboil volume X preboil gravity = postboil volume X postboil gravity

so in this case postboil gravity = 6*40/4.9
