Does anyone have any good tips or tricks for getting all of the LME out of the plastic bag into the boil pot? I soak it a hot water which loosens it up, but it's still difficult to get it all out.
 
Bag? I have only seen it in a can.

If you have some sort of edge you could pull the bag over, that will help get it out, but that might not be feasible to get into your pot.
 
I would put hot wort in it and dump it into the boil pot a few times.

it might be hard to handle a plastic bag with hot wort but warm water(as warm as your hands will stand) will work to dissolve more of the extract. Try a couple (or more) rinses with warm water. Try to not use so much that you affect the amount of wort in the boil pot.
 
Put the bag in a plastic pitcher and add hot wort to dissolve what has not poured out. You can add the diluted LME near the end of the boil.

The pitcher used for bagged milk would be ideal.
 
I leave mine in 150 degree water for 15 minutes - that helps. Then after I add the late addition, I roll the bag from the bottom end, one fold at a time, squeezing each fold. It doesn't get 100%, but there's very little left.
