I'm brewing a Shiner Bock clone tonight, and wondered if anyone had input on a preferred step mash for bock beers. I am doing a partial mash with only 2.5 lbs of 2 row, so I am not sure if it will make any difference in the final product anyway. I am using the AHS Texas Bock kit with:
2.5lbs 2 row
3 lbs amber lme
1 lb brewer's corn syrup
1 3/4 oz Malto-Ferm
1 oz brewer's gold
I planned on just doing all of the grain at 155, and 1.375 qts of water per lb. Just about 3.5 qts. I do have Ph buffer. Will a step mash even help with such little grain? I have 2 of this same kit, I kinda would like to try them with different methods.
