How much on a effect does steeping temperature of the water have on the grains used? I previously brewed a beer and had to steep 0.5 lbs of Belgium caraviel, but I steeped at 171 F, and not 150 - 152 F. The final beer tastes great, but it taste like a wheat beer and not a saison like it should have.

If you're steeping in the 150-165F range, there's not much of an effect.

However, if you're steeping around 170F (which it sounds like you did), you're risking tannin extraction. This can add astringent or grainy flavors, and I could see why this might be relatable to the flavors of a wheat beer.
 
Oddly enough it taste fine. Add an orange slice or lemon slice and it seems like a good fall beer. Thanks for the input.
