I've just purchased an STC1000 which I want to use with a brew belt to heat the beer (but I dot have a method of cooling other than natural cooling in my cellar).

Do I wire this straight into my brew belt or a plug socket?
 
You can wire directly or with a plug, all a matter of how you want to do it.
I would suggest some quality time with some of the extensive discussions on the STC1000 here on HBT. Tons of good info and ideas.

Here's a good one.
 
Set it up for use with two outlets (i.e. hot on one outlet cold on the other). That way if you ever decide to use it for cooling, it's already set up. If you have an outlet that connects the top and bottom together, be sure to use a pair of pliers to snap the bridge off so they operate independently. You can get a cheap plastic box from any hardware store.

Only snap the bridge for the hot side, black wire, of the outlet. Leave the other side, white wire, connected.
Just in case a wiring diagram isn't to clear.

I wired my own first STC1000, and bought this one for my second, pre-built and flashed with WAY more useful features. I would totally recommend this to anyone wanting to gain better and easier control over their fermentations.
 
How do you cut a hole for the STC out of a plastic project box? Especially a straight hole!
