STC-1000 noob question on heating power cord

I'm getting a free (extra) fridge next week and planning on using it as a fermentation chamber. Looking at the eBay temp controller and had a cable question.

If one goes with the Radio Shack project box design, the whole setup is outside the chamber. Fine for the cooling side as the fridge's power cord is external anyway, but what about the temp probe and power cord for the heating element?

Do you simply shut both cords in the door and hope the rubber gasket around the door frame makes a seal? Or do you have to drill/seal an opening into the fridge itself? The free fridge may not be a permanent gift and I don't want to damage it.... Just in case.
