I just finished my Irish Stout. I forced carbed it and it tastes great. My question is... I know it needs to age a bit but will St patty's day be too much time? How long is a good aging period?

conditioning times vary with different stouts. high APV stouts can be conditioned for up to 6 months. (Imperial stouts). Your typical Irish stout around 5-7% should be right around what Orfy said. month and a half 2 months and you'll really notice the flavors combining and mellowing.

Good luck with it lasting mine never does!
