I have a 30 amp electric brewery panel (Kal clone) that will be driving 2 - 5500 watt low density elements. The SSR's I have are 40 Amp with an output voltage of 24-380VAC.

Would it be ok to use these SSR's vs the recommended SSR's that have an output voltage of 90-480VAC?

If you're switching 240vac you should be fine so long as the trigger voltage is within range of your trigger signal. However, with a 30a panel, you can't fire both elements simultaneously. Do you plan on doing back-to-back brewing? If so, you'll need a little additional circuitry to allow that while preventing both elements from being on together and popping your breaker.
 
Fotek SSRs are fine. They'll work just as well. You're only pushing 240v through it, well withing the range.
 
240 falls between both 24-380 as well as 90-480 so its clearly within spec.
Honestly not trying to be smart but what in the world would make you ask this question?:confused: if your really confused by this I would for your own safety get some help with the build.

Yes he would need a simple three way switch at the very least to do this.... however its best to additional relays to kill both legs of power to the elements when not active.
