What are the flavor contributions of Special Roast? I have read that lends a sourdough tang, which is intriguing, but I am hesitant of the nutty notes others have mentioned.

I am brewing a california common and would like to hear any recommendations or lessons learned by anyone who has used Special Roast I'm their recipes.
