Howdy all,
I am sure this has been discussed to death, but I am starting to put together a recipe for an IPA (or IIPA) using special B as about 3% of the grain bill. I think it will be an interesting flavour in combination with some citrusy or floral hops (i have some cascade, amarillo, and others).
What I have found is my SRM gets pretty dang dark when using special B in this quantity, and its basically gotten to the point that if I use crystal 80L I am getting a black beer. Sounds pretty interesting though, wanted to see if anyone else has messed with this before. I will still do it probably next week, but I though it might be worth discussion. Special B (noted for raisiny qualities) and american hops should go well together. I might leave out the melanoidin flavours on this one, as they will likely get lost.
