Hi out there! I'm a beginning mead maker, and I am getting ready to start a new batch. I'd like to make something closer to a Viking-style mead- sparkling, not TOO sweet but with a heavier, creamier mouth feel like good root beer, and something that will produce a thick, creamy head like a stout beer.
Any good recipes for this style of mead out there?
