"Traditional Scottish breweries drew water from underground sources. Although some no longer have private wells, soft water remains the ideal base for a malty Scotch ale."

My question is, would I be better off using my tap water? We have a well and water softener. Or should I stick with my usual routine of 75% RO water from the fill your own jug station at the store, and 25% store bought "spring water". It had always been my understanding that soft water wasn't very good for brewing, but maybe for this style...

What do you think?

I'm thinking that your 75% RO 25% spring water is probably pretty soft anyway. Or you could do 100% RO and harden slightly with gypsum an CaCl.
