The good news is my spouse doesn't visit hbt . . . .

She's not a good cook, which is why I cook most of the time. But, yesterday, she made a chili that used way, way, way too much crushed tomatoes - its acidic spaghetti sauce with a few beans in it and no spices . . . .

So tonight, I'm doctoring it up, added garlic, hot sauces, onion and am serving it over pasta. <insert message here about making lemonade out of lemons>

What's on the menu?
 
Too tired to do anything fancy, so I stopped off at meijer's and got a bag of frozen meatballs, pizza quick sauce, sliced mozzarella and some hoagies, and made meatball subs.
 
I'm working on a Italian-style grilled seafood salad over oranges and fennel, and drinking some freshly-carbed wit while I do it.
 
Bob made a simple dinner tonight- grilled steak, wild rice, pickled beets, sauteed veggies.

Last night, he made grilled lake trout (from Lake Superior) with a baby greens salad and viniagrette, and potato.

I just asked him what he's planning for tomorrow night, and he told me it's venison/lamb meatloaf. Then he rolled his eyes. I think he believes that since I love brewing that I should love cooking. I love eating, though. :rockin:
 
In about 5 minutes I will be making a couple sirloins, and also grilling up some sliced zucchini and sliced vidalia onion that I vacuum marinated overnight in olive oil, balsamic vinegar, sea salt, 1 clove of finely minced garlic, and fresh cracked black pepper. steaks get a salt, pepper, and garlic powder dusting, cooked (to medium for the wife, medium rare for me) over hardwood charcoal, they get a splash of my APA each time they get flipped. :mug:
 
Tonight I did beef chalupas with refried beans. Tomorrow I'm doing chocolate ravioli stuffed with roasted butternut squash and bacon sauteed with mushrooms, onions, garlic and fresh oregano

Just a thought, Jim, but I have a little idea to share with you.

First of all, I'm an excellent cook. Excellent. But, I don't enjoy it. So, sometimes I seem like I'm not really that capable as a cook. Is it possible that your wife actually CAN cook pretty well, but realizes it's to her advantage to defer to your awesome man-prowess in the kitchen? Because then she gets the best of both worlds- great meals, and not having to prepare it! Not that she would be so sneaky, but heck- I would! :rockin:

LOL! The good news is she hasn't made her special salmon loaf lately . . .

I'm kind of used to it - my mother wasn't great in the kitchen, either - she was a big fan of convenience foods.

I could not make this up. Two weeks ago, on a visit to a campus with my oldest son, one of the campus organizations had a big sign up in the student union advertising "Grilled Cheese Sandwiches, $2, delivered to your dorm room".

This was before we went to see the Vagina Monologues, on the same campus. It was quite a visit.

Poor man's Filet Oscar:

Beef chuck filet - seared over the grill to slightly over rare. great flavor and value combo
Wegmans steam in a bag asparagus - 3 minutes until perfectly cooked asparagus with zero prep
Lump crap from a can - in your tuna aisle (tremendous taste for the price)
Bernaise from a packet - OK, it can't match a real bernaise, but it gives the taste, just thicken it up to concentrate the flavors more by cooking a bit longer than the packet says...

Throw the steaks on the grill and by the time they're off (total ~8 min @ 500) you got your bernaise done and crab out of the can and ready. As the steaks rest for a few min under loosely tented foil, zap the asparagus in the steam bag. Put down the steak and drizzle the drippings over it. Stack the asparagus like lincoln logs on top of the steak and top those with lumped crab. Spoon some bernaise over it and splatter some around the plate and you got a solid meal in under 15 minutes without breaking the bank.
 
Mmonacel, that sounds pretty good! I may have to put that one together, I have fresh asparagus, can-o-lump crab, and a chuck roast that I was planning on making tacos out of, I could cut crossgrain into steaks, whip up a quick bearnaise...that may be dinner tomorrow! "poor mans" my rear end! thats American creativity right there!

I think we all need to post up some of our recipes in the food pairing section, I am always looking for new recipes and that area seems under-used! I will be posting there more often....
 
Last night was leftover chicken pot pie gravy over biscuits for me, and leftover pizza for the wife. I have no idea what the kids ate. I took the night off.

Got some Tilapia on sale at the store, so we'll probably have grilled fish and risotto with steamed veggies pretty soon. My schedule is starting to get busy again, so less time to cook fancy meals.

I like to poach tilapia in some white wine, butter, lemon and shallots, remove tilapia after 8-10 minutes, ladle off some liquid into a sauce pan, turn up the heat, add salt, pepper, a touch more lemon and capers, finish with additional butter and cream, thicken with a bit of corn starch, serve over the top of the fish.
 
I like Tilapia encrusted in almonds/parm cheese and pan-seared. Sometimes I use Planters Dry Roasted peanuts instead of almonds (it's sofa king good either way).

Last night was leftover sghetti, tonight is leftover roasted chicken (beer marinated), Wed night is more leftover roasted chicken, the Thurs I'll use the last bit of roasted chicken in a risotto. I cook once and eat for five friggin days...and am soooooo sick of whatever it was I cooked.

I love to cook but hate the cleaning part. So trading the cooking duties for the clean-up-afterwards duties is a great deal for me.

We have friends coming over for dinner Friday night and I'm making poached fish also, with a reduction sauce as you suggested. I usually buy red snapper or cod, depending on what looks good/on sale at the local store.
 
Poaching is such a simple way to cook fish, it keeps everything moist, and plenty of options for adding flavors via the poaching liquid. also lends itself to a simple reduction sauce, adds little fancy touch to a basic dish too!
 
made some tilapia fish tacos last night (put a good mexican rub on it and baked in the oven for 10 minutes). another great way to prepare tilapia or any fish is to make some salsa verde, wrap the fish in a foil packet, put a bit of the salsa verde in with each filet/foil packet and steam that monkey in the oven for 20 minutes or so at 350...

tonight is a rubbed pork loin, put it in the crock pot with 1/2 a busch light when i left for work at about 6:30, will be eating some delicious pulled pork when i get home.
