Started my first mead on Sunday. It’s a 1 gallon traditional. The honey I used ended up having a few “chunks” when I was mixing it up. SG showed 1.106 but over a several hour period appears to have went up to 1.122 before beginning to drop. Not sure if some small pieces slowly dissolved over that time, raising it. Anyway, used Go-Ferm to start. Added .85g Fermaid-O at 24 hours. About to add another .85 at 48. My question is should I add any after tonight. Based on the original SG 1/3 break would be 1.07 but the higher would be now at 1.080. This data was collected from a Tilt.

I think it'll be fine either way, close enough.

Next time if you notice there are crystals it would help to warm the honey to dissolve them, and use a drill-powered mixer to ensure it's thoroughly mixed with the water.

Definitely a lesson learned moment, I did soak it in some hot water, but clearly wasn't hot or long enough. A whip of some sort is for sure in my future too.

How often after the 1/3 break should degassing be required? Still every day or should I switch to a every couple of days?
