Good morning all,

Looking to pick a yeast for a smokey red rye.
Grain bill is
2-ROW 7 lb
RED X 2 lb
RYE MALT 1.5 lb
FLAKED RYE 1 lb
CARA RED 1.25 lb
SMOKED (CHERRY) 1.5 lb

Looking to use Apollo, Citra, Sorachi Ace, and Motueka for hops

Smoked malt is low I know - I find smokey beers often too smokey

Not sure how ot go with the yeast though. Hoping for fruity esters with good flocc. Any thoughts?
 
these are strains you can get some esters out of.

WLP002 Pitch @ 68° and let rise to 70°

WLP007 would be similar as above but with better attenuation.
