hey there all. i'm working on a low calorie beer, 5 gallons extract and partial mash. my question for you guys is how does the small amount of fermentable sugars changer fermentation times / amount of yeast to pitch?

i'm thinking of aiming for 1.020 OG and using East Coast Ale liquid yeast.

ah the VERY light beer. 1 vial of yeast will be more than enough. it should ferment fairly quickly. check your gravity after a week. i wouldn't be surprised if it was stable by then.

And I thought I brewed some low ABV beers.

With such a low OG, you'll want the very best attenuation you can get. Mash those added grains at 150 and hold them for at least 90 minutes. A lower temp and extended rest time will help your beer attenuate much lower. I routinely get my 1029 beers down to 1000 and they have a nice clean, crisp flavor. :mug:
