I've discovered that I really like sour ales, especially as session beers.

However, I did not brew a sour in January to make for this summer.

What I'd like to make is a simple sour, almost berliner weiss like,* but I want it ready to go by memorial day or so.

Ideas?


*(I'm thinking 80% pils, 10% wheat malt, 10% flaked wheat and maybe a touch of caravienna, fermented with a characterful english yeast, but soured.)

Do a sour mash or sour wort for a quick turnaround on a BW. There are plenty of threads here on the two techniques with use for a BW
 
Sour mash + 1000, it's more complex. You will not be sorry. I have done many sour mashes over the years, I love them. Pm me if your interested in a sold proven process. Good luck.
