Is there any reason I can't just use 5 gallons of apple juice and a dose of yeast, without adding anything else? Maybe a few cinnamon sticks, but that's it.
I've read a couple times that adding spices etc. at primary can lead to off-flavors...secondary might be a better idea. I'm just going off what I've read though who knows!
No problem. Every year I do a couple of gallon jugs that way. I don't even add yeast. (I can get my cider unpasturized). Its more dangerous but I've never had a bad one yet!
