I love Cascade. I brewed an all Cascade Pale Ale last year that was very good. I have yet to use Simcoe in any of my brews, but many of my favorite IPAs include Simcoe. Would this be a nice paring for an IPA? I'm thinking of .5 oz each of Simcoe and Cascade at 60, .5 of each at 30, .5 of each at 15, an oz of cascade at KO, and .5 each for dry hop.

Also using 6 lbs NB Gold Malt LME, 2 lbs Briess light DME, and steeping a pound of Caramunich.

Brewtoad puts me at 67 IBU with 6.3 ABV.

What about the pairing?
 
Those two hops do pair pretty well. Personally my favorite hop combo is Simcoe with Amarillo and Citra.
 
I'm sipping one now. Ounce of simcoe at start, ounce of cascade at fifteen, tastes great. Next time I think I'll reverse that and add another ounce of simcoe at flame out. Been pleased with the pairing though.
 
Midwest Supply has a Simcoe Select kit and also if you search these threads you can find a Russian Rivers clone of Row2 Hill56. Fantastic beer because both are Simcoe hops.
 
I jave a DIPA with those same hops and love it!!! Try using some corn sugar to bump up the ABV and also to add some dryness! You wont be disappointed
 
Well, my ABV was way off. Ended up with 7.5% somehow. I am enjoying a couple as I type. Been in the bottle for 11 days. Carbed up pretty well. The caramunich is quite dominate. Was looking for more hoppiness, but the malt made this a bit more balanced than I would have preferred. Instead of an IPA, I have an Imperial Amber Ale, if there is such a thing. But it is good.
